The first two fave anime OP's that spring to mind for me are Strike Witches and Die Buster.
ED would be Strike Witches too ^^;
Strike Witches OP below

Interesting version of Strike Witches ED below.

Die Buster OP below.

Hmmm, I seem to be adding more as I think about it more - GITS OP below.

Cowboy Bebop

Original text from MARl0 below.

I've always been a anime music junky. And I definitely have my favorites. But my current favorite anime theme is Joint, from the second season of Shakugan no Shana. I just can't get enough of it! What are your favorite opening or ending themes?

http://www.youtube.com/watch?v=4Lvfacwn4wo

Another one that is currently at the top of my list is "This is Love" from the OVA Freedom.

We are supposed to play favorites?

I usually fast forward over openings (chapter skip works great... sometimes) and start of the ending means time for the next episode.

I used to watch/listen to them but it became boring quite fast. I guess the reason is the same as why I tend to not rewatch anything. Once I have seen it, I tend to remember it when I see it again and it's somewhat boring to tell what will happen all the time. There is a little that holds such great value that it can be seen more than once but it's rare and it's not because of openings.

    2. Mobile Suit Gundam SEED CE73: Stargazer / Negishi Satori - STARGAZER ~ 星の扉 (Stargazer ~Hoshi no Tobira)
    3. Zero no Tsukaima: Futatsuki no Kishi / ICHIKO - I Say Yes
    4. Shakugan no Shana / Kawada Mami - 緋色の空 (Hishoku no Sora)
    5. Naruto Shippuuden / Home Made Kazoku - Nagareboshi ~Shooting Star~

Aw man, having to choose a few like this is almost painful. x_x"

Ug, this is a difficult question, too many good songs out there. xD Well, I'll just rattle off a few of my favorites.

MOVIN!! by Takacha - 8th Bleach ending.

Rolling Star by YUI - 5th Bleach opening.

What's Up People by Maximum the Hormone - 2nd Death Note opening.

I Will by Sowelu - 4th FMA ending. (I believe.)

Invoke by T.M. Revolution - Used in Gundam somewhere, not exactly sure where.

I SAY YES by ICHIKO - 1st opening for Zero no Tsukaima.

there is a lot of songs that come to mind. Most of them R.T. Feat nino, JAM Project, Ali Project or Do as Infity. Of course though, the groups alone consist of like 50% of the anime openings/endings out there. 90% of that is Jam though. they get around =D

But I am having trouble recalling the actual animation sequences that really stood out.

Only one I can think of that was really superb, was Sousei No Aquarion openining.

But some other openings just have some REALLY good vibes. Songs that just get you in a good mood.
Makka na chikai ( Bosou Renkin ) (i will count this as a JAM opening)
    Both School Rumble Openings
I am ( Second Inuyasha Opening)
Forever we can make it ( To Love Ru)
and of course Lucky Star OP.

For endings, hrmm. A few Inuyasha ones. "Come" left the stongest impression on me. I really like the way it was animated and the music just added more emphasis to it. which is how it should be done.

That Touhou/Strike Witches crossover ED is cute. Currently I'm liking the Kemeko DX ED, and Index OP is great. Toradora OP and ED are very well done too. There's too many songs from anime that I really like so I can't chose favorites without having a huge list, so I'll just leave it at that for now. I'm the same as tymmur as I usally skip openings and endings when i watch animes, especially when I'm watching DVDs. Plus, I don't like most of j-pop or j-rock. There are exeptions though. Black Lagoon and Cowboy Bebop fow example. I'm not a fan of house or techno or that stuff but I do enjoy the Black Lagoon OP and I just love the drums in the ED. I would love to get to know that drummer. Cowboy Bebop has the best OP and ED so far, since I'm a great fan of jazz, especially of bebop. I usually don't skip the OPs and EDs of those two.
I also enjoy the OP of Ghost in the Shell Stand alone Complex from tiem to time, even though it's not really my kind of music, but i usually skip it. The Soundtracks of the Ghost in the Shell movies are unrivaled if you ask me and will never be erased from my HDD. Kenji kaai is one hell of a composer and musician.
Then there are Gunslinger Girl, Ergo proxy, Shingetsutan Tsukihime and Elfen Lied. All of them feature great OPs and EDs but I don't watch them everytime. I must say that of those 4 Elfen Lied has the best OP with Lilium. The Music and the Pictures just fit together perfectly, shortly followed by Shingetsutan Tsukihime, Gunslinger Girl and Ergo Proxy.

Well, since we are already discussing that topic, lets talk about the other side as well, shall we?
Yes, I mean Ops and EDs that suck.
As I said before, i don't like most of J-pop and J-Rock but that doesn't mean that they all suck. I am open minded enough to be able to tell if a piece of music is good, even if it doesn't meet my taste. But there are a few OPs and EDs that actually suck, some when it comes to the lyrics, some when it comes to music and some becasue of both.
The one that climbed on the first place recently is Okusama wa Joshikousei. To put it simply, the anime is a gigantic, steaming pile of shits and the OP and the ED perfectly reflect that fact, both when it comes to lyrics and to the music itself. Same with Lively Idol. The Love Hina anime has a crappy OP and soundtrack as well but the ED isn't so bad.
Well, I could go on but I'm already at my sixth cup of coffee today and I want toa void a heart attack caused by me getting all worked up.

    So long...

Like most people, I had to think about this for a while. I'd say my favorite OPs have been:

    Gundam00 S2 (Just amazing...!) [UVERWORLD]
Shakugan No Shana 1st & 2nd Season 1st OPs [KOTOKO & Mami Kawada (I think)]
CLANNAD ~After Story~ [Lia has a gorgeous voice...makes me cry]
    Kanon (2008) [Ayana]
    BECK [BEAT CRUSADERS]
Kannazuki No Miko [KOTOKO is love]
    Fate/Stay Night [NUMBER201]

Favorite EDs would have to be:

Chrono Crusade (Saeko Chiba] - Probably the most repeatedly heartbreaking ending I've ever become addicted to
Macross Frontier [May'n] - Nothing spectacular on the animation side, but the song is amazing

That's all I can think of...

Favorite ED is the first one of Soul Eater, "I wanna be."

If it's just from the music, the ED of Noir is pretty good. It's called Kirei na Kanjou I think. But if you count the scenes, both endings of Fate/Stay Night. The one with Archer made me think "damn Type Moon is awesome." I can't think of an OP that is super awesome right now, so I'll just go with Kannagi since I was just watching it.

Lets see. It took me a day to go through the list...

GitS: SAC first season (Inner Universe by Yoko Kanno)
    Cowboy Bebop OP
Serial Experiments: Lain OP (Bought the album just for it)
Macross Plus OP (Voices. The a capella version is one of my favorites.)
    Azumanga Daioh OP (It's funny!)
Gunslinger Girl (I'm seriously considering the entire Delgados album for it.)
A couple of the Bleach OP were good.
FLCL closing theme Ride on Shooting Star
A couple of the Code Geass OPs were good. I can't remember the names, sadly.
Paranoi Agent's OP was pretty decent.
The original Guyver OVA's English open (Guyver Rock) was pretty good as a guitar solo.
Death Note's 2nd OP was pretty good too.

There have been others, but I need to go back through them all.

Mm, what comes to mind atm:

Animation + music wise, the Lucky Star OP is definitely up there (probably the only series where I never fast forward during the OP XD).

Some of these I love for the animation + music, some just the music:
OPs: Black Lagoon, Cowboy Bebop, Ergo Proxy, Mushishi, Lain, NHK ni Youkouso!
EDs: Black Blood Brothers, Trinity Blood.

And any music that appeared in Samurai Champloo is basically made of win.
