Seth, you have to realize that the 350z has more low end torque then the RX8 due to engine design. Rotaries don't make much torque, they just rev high. The 350z also makes 276HP naturally aspirated out of a V6 configuration which is about 240whp to the wheels. Whereas the RX8 makes 246HP(?) and gets around 200whp to the wheels. The 350z is going to come with control assists to keep you from spinning out and whatnot, the RX8 also has it but the "fight for control" will be more apparent on the stronger machine.
